These are a super fun appetizer.
Bacon-Wrapped Shishito Peppers
If you're not familiar with these peppers, then you're about to have a real good time. If you are familiar, well then I don't need to tell you. What's unique about these peppers is that while most are mild, every so often one is very spicy – making them the perfect food for a game of food roulette!
Equipment
- Sheet Pan
- Paring Knife
Ingredients
- 15 – 20 each Shishito Peppers (depending on how many slices of bacon your package has)
- 8 oz Cream Cheese
- 1/2 c Shredded Mexican Cheese
- 2 tsp Smoked Paprika
- 15 – 20 slices Regular Cut Bacon (1 package)
Instructions
- Preheat the oven to 425° and line a sheet pan with tin foil
- Slice the shishito peppers lengthwise on one side allowing you to open them slightly and remove the seeds and white pith, rinse and drain
- Warm the cream cheese for 45 seconds in the microwave on high
- Mix the shredded mexican cheese and smoked paprika in with the cream cheese until everything is blended well
- Stuff each pepper with the cheese mixture then wrap with one piece of bacon and place on the sheet pan
- Once all the peppers are stuffed and wrapped, place the sheet pan in the oven at 425° for 10 minutes, flip each pepper and then place the sheet pan back in the oven for 10 additional minutes or until the bacon is to your desired level of crispiness
